Slice & Mix Frigerated Pickles ...

2 - 3 unpeeled or peeled cucumbers sliced thin
1 or more large green, red or yellow sliced peppers (stem and seeds removed)
1 squash - zuccini or yellow sliced thin
1 very large or 2 or more regular-size onions
1 T. regular iodized or kosher salt
2 t. celery seed
2 c. cold water
4 cloves garlic, sliced
1 good handful of fresh dill (maybe a cup?) or t. of dried
1 t. mustard seeds
1/2 t. chili flakes or a dried red hot pepper (optional)
1 t. black peppercorns (optional)
1/4 C. sugar
2 C. white, cider, or white wine vinegar

Place cucumbers & peppers & squash in glass bowl. Mix liquids & spices then pour over cukes. Cover & refrigerate. Add cucumbers to replace those eaten. Should last 5 weeks.

I wish I knew someone with a garden overflowing with cukes and zucchini so I could take them off their hands and have an excuse to make these.

Wish you lived nearby so I could give you our extras. Been sitting our neighbors garden so we're overwhelmed with produce. Taking some to church tomorrow to give away.

Need to blend up squash & freeze for bread this winter.
